Nutrition Revolution Challenge #2

Hey Mavericks!  Your pasta is coming home (one box per student – if you love it, let us know and we will send extras home).  Also, with the pasta will be a few recipes to help if you don’t have your own.  There is ALSO a Media Release Form.  The media release form allows us to have media at our assembly on May 19th to showcase what we are doing – your child will NOT be named.  IF your child will be identified on camera, more specific permission will be requested.

CHALLENGE #2:

Obesity is a complex problem, but what’s really terrifying is that it’s a precursor to a whole host of diet-related diseases. Junk food marketing, inadequate food education and unregulated sugar in everyday products that are putting the health of future generations at risk. We can start with simple and healthy changes to our kids lunches.

Pasta Salad Challenge:

Are you thinking: “But pasta salad is incredibly unhealthy!”

It doesn’t have to be.

This week, every family is going home with one box of Chickapea pasta, made from lentils and chickpeas. I have provided two recipes below but I want everyone to feel free to come up with their own healthy version of pasta salad and bring it to school for lunch! Chickapea pasta is nut free and gluten free. The only two ingredients are lentils and chickpeas! If you have an allergy to this product, feel free to use pasta of your choice.

Unlike the infused water challenge, you may only enter this challenge ONCE.

Prizes will be handed out at the assembly on May 19th.

RAFFLE

Tickets are being sold in the office for a raffle basket containing healthy goodies (including more Chickapea pasta)!

Tickets are 1 for $2, 3 for $5.

All proceeds go to German Mills Healthy Snack Initiative.

Confetti Pasta Salad:

 Ingredients:

  • 1 box Chickapea pasta, cooked and RINSED
  • 1 cup of cherry tomatoes, sliced
  • 1 cup of sliced mini peppers or diced bell peppers
  • 1/2 a large english cucumber
  • 2 tbsp feta cheese
  • salt and pepper

Dressing:

  • 2 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tsp italian seasoning
  • salt and pepper to taste

 

Mix dressing ingredients together and toss with pasta salad ingredients. Enjoy!

 

Broccoli Blueberry Pasta Salad

Ingredients:

  • 1 box Chickapea Pasta, cooked and RINSED
  • 1 cup small broccoli florets
  • 1/2 cup blueberries
  • 1/2 cup diced apples tossed with lemon juice to prevent browning
  • 1/3 cup dried cranberries or raisins
  • 1/4 cup diced red onion
  • 1/4 cup sunflower seeds
  • 1/4 cup sliced almonds

 

Dressing:

  • 1/2 cup plain greek yogurt
  • 3 tbsp buttermilk (or plain milk)
  • juice of 1/2 lemon (2 tbsp)
  • 1 tbsp poppy seeds
  • salt and pepper to taste

 

Mix dressing ingredients together and toss with pasta salad ingredients. Enjoy!
